Popular Rice Varieties Across Asia

1. Basmati RiceIndia, Pakistan, Sri Lanka, Myanmar

Known for its long, slender grains and fragrant aroma, basmati rice becomes light and fluffy when cooked. It’s ideal for biryani, pilaf, and other dry dishes where separation of grains is preferred.

2. Jasmine RiceChina, Vietnam, Thailand, Malaysia, Indonesia

With a soft, moist texture and subtle floral scent, jasmine rice is a favourite in Southeast Asia. It pairs beautifully with curries, stir-fries, and grilled meats—think Thai Green Curry or Vietnamese Pork Chops.

3. Sushi or Short Grain RiceJapan, Korea, parts of China

This variety is stickier due to higher starch content, making it perfect for shaping sushi or scooping with chopsticks. It’s also used in Korean bibimbap or Japanese rice bowls.

4. Glutinous (Sticky) RiceLaos, Cambodia, Northern Thailand, Northeast Vietnam

Despite the name, glutinous rice is gluten-free. It’s extremely sticky when cooked and is traditionally used for steaming, banana leaf parcels, and sweet or savoury desserts like mango sticky rice or Lao khao tom.


How to Wash Rice Properly

Washing rice removes excess starch and surface debris, resulting in cleaner, fluffier grains. Follow these steps:

  1. Place rice in a deep bowl.

  2. Fill with cold water and swirl gently.

  3. Drain and repeat 3–4 times until the water runs clear.

This method works for all rice types and ensures your rice doesn’t turn mushy.


🍲 Cooking Rice: The Absorption Method

Long Grain Rice (e.g., Basmati, Jasmine)

  • First cup: 2 cups water

  • Each additional cup: 1.5 cups water

Method:

  1. Bring to boil with the lid on.

  2. Stir, reduce to low heat, and cook for 15 minutes.

  3. Turn off the heat and rest for 15 minutes without removing the lid.

  4. Fluff gently with a fork or chopsticks.


Short Grain Rice (e.g., Sushi Rice)

  • Soak for 30 minutes before cooking.

  • Use 1.5 cups water for the first cup, 1 cup water for each additional cup.

  • Cook using the same absorption method as above.

This extra soak helps it cook evenly and hold its shape—ideal for sushi and Japanese dishes.


Steaming Sticky Rice

Sticky or glutinous rice requires a different technique:

  1. Soak in cold water for at least 2 hours (overnight is best).

  2. Drain and place in a steamer basket over boiling water.

  3. Steam for 30–45 minutes, turning halfway through for even texture.

Sticky rice is perfect for Asian desserts, wrapped parcels, or served alongside grilled meats like Thai gai yang (grilled chicken).
