What Is Banh Xeo?

Banh Xeo is a Vietnamese rice flour pancake, lightly tinted yellow with turmeric and flavoured with coconut cream. It’s pan-fried until crispy and folded over a fresh filling of prawns, bean sprouts, herbs, and vegetables. Typically served with lettuce and dipping sauce, it’s eaten with your hands and wrapped like a parcel—perfect for sharing!


Banh Xeo Recipe (Vietnamese Pancake)

Ingredients

Batter:

  • 1⅔ cups rice flour

  • ½ cup coconut cream

  • 1 tsp ground turmeric

  • 1 spring onion, thinly sliced (plus extra for serving)

  • 1 tsp salt

  • 2 cups water

Filling:

  • 1 cup coriander leaves (plus extra for serving)

  • 1 cup shiso leaves* (perilla)

  • 1 cup Vietnamese mint leaves (plus extra for serving)

  • 2 red bird’s-eye chillies, thinly sliced (plus extra for serving)

  • 2 carrots, thinly shredded

  • 2 cups bean sprouts, trimmed

  • 24 cooked prawns, peeled with tails intact

  • Vegetable oil for cooking

Optional to serve:

  • Chilli jam*

  • Iceberg lettuce leaves

*Available at most Asian grocers and specialty supermarkets.


Method

  1. Make the batter:
    In a mixing bowl, combine rice flour, coconut cream, turmeric, spring onion, salt, and water. Stir until smooth. Cover and let the batter rest for 1 hour.

  2. Cook the pancakes:
    Heat a non-stick frying pan over medium-high heat and lightly brush with vegetable oil. Pour in ½ cup of batter, swirling to coat the pan in a thin layer.

  3. Add the filling:
    After 3 minutes, once the pancake is just cooked through and crisping at the edges, top one half with a portion of herbs, chilli, shredded carrot, bean sprouts, and 3 prawns.

  4. Fold and finish:
    Fold the pancake over to enclose the filling. Cook for another 30 seconds, then transfer to a serving plate.

  5. Repeat and serve:
    Continue with remaining batter and fillings. Serve immediately with chilli jam, extra herbs, fresh chilli, and crisp lettuce leaves.


How to Eat Banh Xeo

Tear off a piece of the pancake, wrap it in a lettuce leaf with some herbs and dip it in your favourite nuoc cham (Vietnamese dipping sauce) or chilli jam. It’s a hands-on experience and a beautiful blend of textures—crispy, fresh, soft, and spicy.
