How to Store Thai Curry Paste: Tips to Keep It Fresh and Flavourful

Storing Thai Curry Paste in the Fridge

If you're planning to use your curry paste within a few days, refrigeration is a great option.

Steps:

  1. Transfer to an airtight container: A glass jar or BPA-free plastic container works best.

  2. Flatten and compact the paste: Stir and press the paste down to eliminate air bubbles and flatten the surface.

  3. Seal it well: Screw the lid on tightly to keep air out.

Pro Tip:
To extend its life to 2–3 weeks, pour a thin layer of vegetable oil (½–1cm) on top before sealing. This acts as a barrier against oxidation and mould.


Freezing Thai Curry Paste for Long-Term Use

Want to make Thai green curry or red curry in a flash? Freeze your curry paste in single-serve portions and save time on busy nights. Here are two tried-and-tested methods:

1. Ice Cube Tray Method

  • Lightly oil the tray to prevent staining and sticking.

  • Fill each cube slot with curry paste.

  • Freeze for at least 2 hours.

  • Transfer frozen cubes to a zip-lock bag or airtight freezer-safe container.

You can grab just one or two cubes as needed — perfect for cooking for one or whipping up a quick stir-fry!

2. Plastic Wrap Method

  • Spread out a sheet of plastic wrap on your counter.

  • Place 1–2 tbsp portions of curry paste about 5cm apart.

  • Cover with a second layer of plastic wrap.

  • Press and cut between each portion, then wrap tightly.

  • Store wrapped portions in a zip-lock bag or container.

This is a great mess-free way to portion and freeze without the need for specialised trays.


How to Thaw Frozen Curry Paste

Here are three easy ways to defrost your frozen Thai curry paste:

  1. Cook straight from frozen: Add the cube directly into a heated pan with oil and cook on low heat to gently thaw and release flavours.

  2. Fridge thawing: Place your portion in the fridge the night before cooking.

  3. Bench-top thawing: Leave at room temperature; it usually takes about 1–2 hours.
