  • 1 tbsp Chinese rice wine (Shaoxing)

  • 1 tsp brown sugar

  • 1 tsp sesame oil (optional)

  • 1 tsp freshly grated ginger (optional)

  • ½ small red chilli, finely chopped, seeds removed (optional)

2. Zesty Thai Fish Sauce Dip

Tangy and spicy—perfect for Thai-style dumplings or grilled meats.

Ingredients

  • 6 tsp finely minced garlic (approx. 8 cloves)

  • 3 tbsp Asian fish sauce

  • 3 tbsp lime juice (from 3–4 limes)

  • 1.5 tbsp light brown sugar

  • 1.5 tbsp finely chopped fresh coriander, including stems

  • 1 tsp chilli flakes

Method
Mix everything in a bowl and stir until the sugar dissolves completely. Best served fresh.

3. Creamy Coconut Curry Dipping Sauce

A bold twist that brings Southeast Asian flavours to the table.

  • 1 tbsp Thai red curry paste

  • 2 tsp lime juice

  • 1.5 tsp soy sauce

  • 2 tsp fish sauce

  • 4 tsp grated fresh ginger

  • 4 tbsp thinly sliced spring onion
