Unlike pasta or egg noodles, ramen noodles are typically made with wheat flour and an alkaline solution called kansui (or a substitute like baking soda). This is what gives ramen its signature chewiness, springy texture, and slightly yellow colour. When cooked right, ramen noodles hold up beautifully in hot broth without going soggy.

Make Homemade Ramen Noodles

There’s nothing quite like the slurp-worthy satisfaction of fresh ramen noodles. Making them at home is easier than you think—and once you try it, you may never go back to store-bought again. Whether you're building the ultimate ramen bowl or tossing them into a stir-fry, these homemade ramen noodles will elevate your cooking.

🧂 Ingredients

  • 1 cup plain flour

  • 1 large egg, beaten

  • 25ml water (warm)

  • 15ml vegetable oil

  • A pinch of salt and baking soda (optional – for chew and texture)


👨‍🍳 Method

1. Mix the Dough

In a mixing bowl, whisk together the flour, salt, and baking soda. Add the beaten egg and warm water. Using your fingers or a spoon, mix until everything is moistened. Begin kneading the dough until it comes together into a ball—about 2–3 minutes of kneading will make it smooth and elastic.

2. Chill and Rest

Shape the dough into a rectangle, wrap it in cling film, and refrigerate for at least 1 hour. This helps the gluten relax and makes rolling easier.

3. Roll Out the Dough

Remove the dough and divide it into 6 equal pieces. Dust each piece with flour. Using a manual pasta roller or rolling pin, flatten each piece into a thin sheet. Let the rolled-out sheets rest for 5 minutes before cutting.

4. Cut into Noodles

Use a sharp knife or pasta cutter to slice the sheets into thin noodle strips. Dust with flour to prevent sticking.

5. Cook the Noodles

Bring a large pot of water or broth to a rolling boil. Add your noodles and cook for 1–2 minutes, or until just tender. Fresh noodles cook quickly—don’t overdo it!

💡 You can freeze extra noodles. Add them straight into boiling broth from the freezer and cook for an extra 30 seconds.


🍲 Serving Ideas

Use your homemade noodles in:

  • Rich and silky miso or tonkotsu ramen

  • Light shoyu (soy sauce) broth with seasonal veggies

  • Spicy stir-fried ramen with sesame and garlic

  • Cold ramen salad with ponzu dressing for summer
