Popular in Thai and Vietnamese foods, bean thread noodles are made of green mung bean flour. When dry, the noodles are thin, translucent and wiry and can be difficult to handle. 

Usage and cultural significance

They are also known as glass noodles, mung bean noodles and cellophane noodles. Before you can use them you will need to soak to become soft, slippery, and easier to cut. Bean thread noodles can be used in soups, salads or as stuffing with other ingredients in spring rolls or meat loaf.
