Sopa De Tortilla (Tortilla Soup)

This spicy and hearty soup is garnished with crisp tortilla strips and grated cheddar.
Ingredients
- . . 2 cups chicken stock 100g diced canned tomato ½ onion, diced 2 cloves of garlic, diced 2 cooked tortilla **reserve 1 fried tortilla afterwards for thickening mole sauce Salt and pepper to taste 2 tbsp canola oil
- . . Garnish: Lime wedges Feta or queso fresco Coriander Leaves Shredded chicken Fried Tortilla Avocado

Heat pot over medium-low heat. Canola oil and gently fry pieces of tortilla until pale and golden brown. Drain on paper towels.
Add onion and cook for 2 minutes stirring occasionally until it begins to soften.
Add garlic and cook 1 minute.
Add tomato, and chicken stock and simmer for 2 minutes.
Season to taste with salt and pepper.
