Entrée
Niçoise Salad (2 pax)
Ingredients
• 2 eggs
• 1 cup green beans, trimmed
• 1 cup lettuce leaves
• 2 large potatoes
• 1 tomato, diced
• ½ red onion, diced
• ½ cup canned tuna, drained
• 6–8 olives
• Dressing: 4 tbsp olive oil
• Dressing: 1 tbsp lemon juice or red wine vinegar
• Dressing: ½ tsp Dijon mustard
• Dressing: salt and pepper
• Dressing: ½ anchovy (optional)
• Dressing: 1 tsp honey (optional)
Method
Step 1: Boil eggs for 7–8 minutes, peel and halve.
Step 2: Boil the potatoes until tender; blanch the beans for 2–3 minutes.
Step 3: Arrange lettuce, potatoes, tomato, red onion, tuna, beans, olives and eggs on a plate.
Step 4: Whisk the dressing ingredients together and drizzle over the salad.
Main
Lamb Kofta with Pilaf Rice & Tomato Salad (2 pax)
Ingredients
• 250g minced lamb
• 2 cloves garlic, minced
• ½ onion, chopped
• 1 tbsp chopped parsley
• 1 tsp ground cumin
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp black pepper
• 1 tbsp olive oil, for cooking
• 150g long-grain rice
• 300ml chicken stock or water
• 1 tbsp olive oil or butter
• 2 tbsp onion, finely diced
• ½ tsp salt
• ½ tsp cayenne pepper
• 2 tomatoes, diced
• 1 tbsp olive oil (for tomato salad)
• 1 tbsp lemon juice
• Salt and pepper
• Chopped parsley (optional)
Method
Step 1: For the pilaf: heat oil or butter and sauté the onion. Add rice and stir 1–2 minutes. Add stock and salt, cover, and cook 12–15 minutes. Rest 5 minutes.
Step 2: For the kofta: combine lamb, garlic, onion, parsley, cumin, paprika, salt and pepper. Shape into logs or patties.
Step 3: Cook the kofta in olive oil for 8–10 minutes, turning until browned and cooked through. (Oven option: preheat to 180°C and cook 10 minutes.)
Step 4: For the tomato salad: mix tomatoes with olive oil, lemon juice, salt, pepper and optional parsley.
Step 5: Plate lamb kofta with pilaf rice and tomato salad. Serve the Niçoise salad separately or as a shared side.
