Niçoise Salad & Lamb Kofta with Pilaf Rice & Tomato Salad
Preparation time: 30 minutes
Cooking time: 25 minutes
Serves: 2
Ingredients
Niçoise Salad
- 2 eggs
- 1 cup green beans, trimmed
- 1 cup lettuce leaves
- 2 large potatoes
- 1 tomato, dice
- ½ red onion, dice
- ½ cup canned tuna, drained
- 6–8 olives
Dressing
- 4 tbsp olive oil
- 1 tbsp lemon juice or red wine vinegar
- ½ tsp Dijon mustard
- Salt and pepper
- 1/2 pcs Anchovies (option)
- 1 tsp honey(option)
Lamb Kofta
- 250g minced lamb
- 2 cloves garlic, minced
- ½ pcs onion chop
- 1 tbsp chopped parsley
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil for cooking
Pilaf Rice
- 150g long-grain rice
- 300ml chicken stock or water
- 1 tbsp olive oil or butter
- 2 tbsp onion, finely diced
- ½ tsp salt
- 1/2tsp cayenne pepper
Tomato Salad
- 2 tomatoes, diced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
- Optional: chopped parsley
Method
Pilaf Rice
- Heat oil or butter, sauté onion. Add rice, stir 1–2 min. Add stock and salt. Cover, cook 12–15 min. Rest 5 min.
Niçoise Salad
- Boil eggs 7–8 min, peel, halve. Blanch beans 2–3 min. Arrange lettuce, potatoes, tomato, red onion, tuna, beans, olives, eggs. Whisk dressing and drizzle.
Lamb Kofta
- Combine lamb, garlic, onion, parsley, cumin, paprika, salt, pepper. Shape into logs or patties. Cook in olive oil 8–10 min, turning until browned and cooked through,
- Cook from oven (pre heat 180 degree cook at 10min) - option
Tomato Salad
- Mix tomatoes with olive oil, lemon juice, salt, pepper, and optional herbs.
Serve
- Plate lamb kofta with pilaf rice and tomato salad. Serve Niçoise salad separately or as shared side.
