Pork Shoulder meat is fatty than pork leg meat and produces very tender and succulent slow cooked dishes or being minced for dumpling.

Usage and cultural significance

Slowly cooked for hours it becomes meltingly tender. The bony end of the shoulder is the Ham Hock or Hough, inexpensive and either smoked or unsmoked. They require long slow braising until all the sinew and other tissue have melted into a richly flavour.
