Daikon

Profile

Daikon is a white, winter radish that grows primarily in Southeast and East Asia. It is characterised by large, rapidly growing leaves and a long, white root. It is technically considered a cruciferous vegetable therefore has many of the same benefits in its leaves.

Usage and cultural significance

Use daikon radishes any way you would use a carrot and then some. Try them baked or boiled in stews and soups or in a stir fry. You can ferment the vegetables for later use as well.
