Scallop tostadas

I love this recipe as it used amazing fresh scallops and serve with guacamole and sour cream.
Ingredients
- 3 unit Scalops
- to taste Salt pepper
- for garnish Sour cream
- for frying Butter and Olive Oil
- 2 tasp Diced Avocado
- 2 tasp Diced Tomato
- 1 tasp Diced Red onion
- 1 tsp for juice Lime
- 1 tasp Fresh Chopped Coriander
- to taste Salt and Pepper

Mash the avocado in a small bowl with the tomato, red onion, corriander, lime juice, salt, pepper to taste

2Season scallops with salt and black pepper. Add the butter and oil to a 12-inch skillet on high heat. Once the butter begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1.5 minutes on each side.

3Spoon the guacamole onto the tostada, top with scallops and drizzle with sour cream.
