Soba Noodle Salad

This easy and flavourful Japanese-inspired soba noodle salad is perfect with any veggies you have on hand and can be served cold, warm.
Ingredients
- 1/4 package Soba noodle
- . . Dressing (1 tasp soy sauce, 1 tasp mirin, 1 rice wine vinegar, garlic and ginger paste to taste, salt and pepper)
- . . Vegetables (1 spring onion thinly slice, 10-12 green beans, 1/4 carrot julienne, green peas or edamane)
- 120 g Optional with poached chicken
Directions

Cook noodles in a large saucepan of boiling, salted water for 3 to 4 minutes or until tender. Drain. Transfer to a large bowl. Toss with oil.

2Cook carrot, peas or edamane and green beans in a saucepan of boiling water for 1 minute or until bright green and tender. Drain. Refresh under cold water. Thinly slice green beans thinly if you use them.

3Combine mirin, vinegar, soy sauce and garlic in a jug. Thinly slice remaining onions. Toss to combine and serve.
