🍗 Dak-Galbi (Korean Spicy Stir-Fried Chicken)

INGREDIENTS
500g chicken thighs, boneless, skinless, cut into bite-sized pieces
1 tbsp vegetable oil
1 medium onion, sliced
1 medium sweet potato, thinly sliced
1 cup cabbage, chopped
½ medium carrot, sliced
100g flat Korean rice cake (tteokbokki)
For the sauce:
1 tbsp sesame oil
2 tbsp gochujang (Korean chili paste)
1 tbsp gochugaru (Korean chili flakes)
1 tbsp soy sauce
2 tbsp rice wine vinegar
1 tbsp sugar
1 tbsp minced garlic
1 tsp minced ginger
1 tbsp sesame seeds
2 green onions, sliced for garnish
1 cup cooked rice (for serving)
METHOD
Step 1: Marinate the Chicken
In a bowl, mix all the sauce ingredients together.
Step 2: Stir-Fry the Vegetables
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onion, zucchini, and potato slices. Stir-fry for 4-5 minutes until they start to soften.
Add the chopped cabbage and continue cooking for another 2 minutes until the cabbage wilts slightly.
Step 3: Cook the Chicken
Push the vegetables to the side of the pan and add the marinated chicken to the skillet. Cook for 7-8 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.
Drizzle the sauce, and sesame oil over the cooked chicken and vegetables, allow to cook until all the flavours come together then sprinkle with sesame seeds.
Step 4: Serve
Serve the Dak-Galbi hot, with a side of steamed rice. Garnish with green onions and enjoy!
🍉 Hwachae (Korean Fruit Punch)
Serves: 4
Prep Time: 15 minutes
Execution Time: 5 minutes
INGREDIENTS:
300g watermelon, diced
100g canned mandarins, drained
80g strawberries, sliced
70g blueberries
100g coconut nata (jelly), cut into small cubes
500ml Schweppes lemonade (or any lemon-lime soda)
240ml cold water
30g sweetened condensed milk (adjust to taste)
Ice cubes (optional, for extra chill)
METHOD
To prepare the fruit: In a large bowl, combine the diced watermelon, canned mandarins, sliced strawberries, blueberries, and coconut nata (jelly). Gently toss to mix all the fruits together, ensuring even distribution,
To make the punch base: In a separate jug, mix together the Schweppes lemonade, cold water, and sweetened condensed milk. Stir well until the condensed milk is fully dissolved into the liquids. The condensed milk will add a creamy sweetness that complements the fresh fruits beautifully.
To assemble: pour the lemonade mixture over the prepared fruit and gently stir to combine everything together. If you like your Hwachae extra chilled, add some ice cubes to the bowl.
